Vegan Creamy Pesto Sauce

I tried out this recipe from Laura Miller’s Vegan cookbook, Raw. Vegan. Not Gross, and I loved it. It was quick, easy, and actually very good. It’s packed full of flavor and the upside? No guilty feelings afterwards. This recipe also helped me discover my new love: nutritional yeast. So whether you’re on a diet, starting a new healthy lifestyle, or just exploring different types of food, this recipe is a great way to get you started on your journey. And, much like workout clothes, you’ll feel better than everyone else around you after making and eating this.

Recipes + Directions

Ingredients

  • Zucchini
  • Basil
  • Pistachios
  • Walnuts
  • Nutritional Yeast
  • Olive Oil
  • Salt + Pepper

Directions

  • Combine all of the ingredients in a food processor until completely mixed while still slightly chunky.
  • Spiralize Zucchini and place on a plate.
  • Pour basil sauce over the zucchini noodles and garnish with basil, pistachios, walnuts, and a sprinkle of nutritional yeast.
